Ingredients for the Perfect BBQ Veggie Burger
¾ cup dried farro, spelt or barley
1 can black beans
1 onion, diced
1 carrot, diced
1 stalk of celery, diced
2 tablespoons extra virgin olive oil
½ cup cashews or pecans
1 teaspoon paprika
2 tablespoons freshly chopped coriander
½ lime, squeezed
2 tablespoons olive oil
1 teaspoon salt
¼ cup chickpea flour

If you can get your hands on farro, it makes for a great complex carb to add to your veggie burger and adds a wonderfully subtle, nutty flavor. In order to speed up the cooking time, it’s best to let the farro soak overnight in cold water before you will be using it. Farro doesn’t expand very much while cooking so when you are ready to make your veggie burgers. Follow the instructions on your farro for cooking time. While your farro is cooking, boil your potato in a separate small pot, until it is tender inside and a fork can easily penetrate it. When you potato is done, peel it, cube it and set aside.
Once the farro is cooked, strain it of excess water and set aside to cook in a bowl.
Open, drain and rinse your canned beans. Set aside.
Now, gather your diced ingredients – carrot, onion and celery – and sauté them in a pan with your extra virgin olive oil. This will add plenty of flavor to your veggie mix.
Now in a food processor, add your cashews or pecans, diced potato, black beans, lime juice, paprika, a few sprigs of coriander and your chickpea flour. Mix. Place the blended mixture into a bowl. Add your cooked farro, sautéed veggies and a bit of salt. Mix with your hands and shape into patties. Before barbecuing, place in fridge to set.
