Winter is synonymous with cough and cold. Yep, those annoying illnesses strike us when we least expect it and despite the undisputable progress of medicine, the best remedy to be the common cold is grandma’s remedy – hot wine! (We’re joking, of course)

This tradition is as old as time and for good reason – wine has antioxidant properties which fight cell aging, also protecting the heart and they even fight coughs and sore throats! Unlike artificial medicines, cooked wine has a fruity aroma, great taste and a gorgeous ruby red color. This health elixir can be made through a long and complex preparation – the must of wine from pressing grapes. It is cooked over high heat in a copper pot until evaporation.

Once cooled, the must is then fermented and transferred into a container where it can age properly so it can get its unique taste and health benefit properties. Invented in the Marche Region of Italy, cooked wine has made its way throughout most of Italy and is flavored in many different ways.

Some people like to put quince, cinnamon, cloves and even dried orange peel. This is a delicious drink that can be used to prepare traditional biscuits such as mostaccioli, garnish semi-freddo desserts, flavor stuffed pepper dishes, used to cook duck breast… But the greatest value of cooked wine is its healing properties which delight the palate and help overcome winter ailments!
